Day 3: Renacimiento Chicharrones
Today's Cool Stuff
When I was a kid, instead of leaving out milk and cookies, we would leave out chicharrones and bourbon, with some carrot sticks and celery for the reindeer. It's one of my favorite childhood memories, and probably the most unique family tradition we had.
Chicharrones are also known as pork rinds or pork cracklins and they are experiencing a bit of a renaissance because of the keto diet. There are so many different flavors now, and they've found a way to air pop them too. They're my stressed out snack of choice. If you haven't tried them before, I'd suggest Epic's Salt and Pepper to start. Or grab some cheap-o Mission air-popped style and mix it with your own seasonings. Hope you enjoy!
Today's Accomplishments
1. Took a shower. Washed my hair. Don't care, did self care.
2. Hugged some dogs- the last day for a long time! ๐ญ
3. Held my first tutoring meeting of the year and it was wonderful to see one of my kiddos again.
4. Put in for all of my prescription refills and did my med box.
5. Keeping my chin up. Today has been a good day for news in general. But I'm staying optimistic.
